Summer Corn

I love eating fresh corn on the cob in the summer...but have had many failed attempts at that in past years.  The corn here is just not the same as your local, south eastern U.S. farmer's market corn.  But today I found some at our import store, grown on their farm down the road.  Cheap, local and it was pretty good (still not quite sweet corn from America but).  I had great helpers to shuck the corn!  They did it all by themselves and did a good job. I only had to get a few of the silks off myself.

And the eating...everyone enjoyed the eating.  We had a light summer meal tonight- corn, veggies and hummus and watermelon.  No one missed the meat or carbs (well other than corn). It has been so hot and we are minimally running A/C to stay within our electricity limit, so cool was the way to go tonight.

After dinner the boys made "beds" out of chairs...who needs real beds when you can make them?  They all played for awhile until Lucy fell off and it all went downhill from there to bedtime. (She was fine).
